from careful selection of the bunches to technical ‘adjustments’ to ensure manual work is performed
as far as possible; manual skills make all the difference, the detail that gives body and value to the final product.
Making a ‘different’ wine means accepting that climate has changed today and consequently even the grapes,
although the harvest is still performed by hand.
The difference lies in our heritage: technology is fine but only with awareness,
so are updating, winemaking techniques and the focus on drying
